Hummingbird Banana Loaf

Banana loaf yang satu ini terasa berbeda, karena penggunaan brown sugar yang terasa cukup dominan. Mungkin itu juga yang membuat banana loaf ini bertekstur sangat lembut? *nebak ala chef amatir 🙂

Satu hal pasti, loaf ini enak banget.. Dimakan sore hari bersama teh hangat, pasti membuat hari terasa lebih indah Nom… Nom.. Nom…

Recipe: from Hummingbird the Bakery -Cookbook

270g soft light brown sugar (I used 240g)
2 eggs
200g peeled bananas, mashed
280g plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon (I skipped this, because Keenar doesn’t like cinnamon)
1 teaspoon ground ginger
140g unsalted butter, melted

Pan: 23×13 cm, greased and dusted with flour

Preheat oven to 170c

Put the sugar and eggs in a freestanding electric mixer and beat until well incorporated. Beat in the mashed bananas.

Add flour, baking powder, bicarbonate of soda, cinnamon and ginger to sugar mixture. Mix it thoroughly until all dry ingredients have been incorporated into the egg mixture. Pour in the melted butter and beat until all are well mixed.

Pour the mixture into pan and smooth over with a palette knife. Baked in the preheated oven for about 1 hour or until firm to touch and a skewer inserted in the centre comes out clean.

Now your Humming Bird Banana Loaf is ready to serve!

Note: I add 20gr choco chips because my baby love it 🙂
